Castelines Classic extra virgin olive oil is a blend of the four typical olive varieties of the PDO Vallée des Baux de Provence. We cold press within six hours of harvesting to ensure that the olives retain their vegetal, fruity character and to preserve the subtle and complex features of Domaine Castelas. The oil's aromatic persistence unveils an attractive and complex range of flavors: freshly cut grass, raw artichoke, apple and tomato plant.
