Červar San Servolo is named after the region near Novigrad, where the Červar family planted its olive trees. This extra virgin olive oil is a blend of Busa, Rosignola, Leccino, Pendolino and Picholine olives. It is characterized by a light green color, pleasant spiciness and bitterness, and intense olive, almond and herb aromas. This oil is an interesting spice for fish or cheese, as well as for everyday culinary use.
