At the beginning of October, we get Magaria, a fine oil in limited quantities. The collection of fruits is done exclusively by hand when olives are almost green. The oil has a beautiful golden green color with a captivating fruity scent and complex vegetal notes, among them tomato, unmistakably, stands out. The olfactory characteristics are then confirmed in the mouth where, at the initial sweet, follows the bitter, well-supported by a slight spiciness.
The farm Sciauro di Sicilia covers 30 acres of land in the hills, a few miles from the sea, in the country side of Castelvetrano, Valle del Belice, Trapani. The 3,000 trees that make up the farm have ranged in age from 10 to more than 100 years of age. It is here that our extra virgin olive oil born, through traditional methods to preserve aromas and complex flavors.
