Frantoio is an Italian cultivar typical of the central regions of Umbria and Toscana. The olives are small to medium size, and the trees are highly productive in good seasons at around 23 percent yield. The oil obtained from this cultivar features a clear green color with slight yellowish notes. It stands out for its complex and elegant fruity taste of medium to strong intensity with hints of thistle and artichoke on a dried almond background.
