Our Oleavia Aşılık II Edition extra virgin olive oil is produced through a meticulous and 100-percent organic process. Each olive is picked by hand to avoid bruising and damage in early November. Within hours of harvesting, the olives are cold extracted and the EVOO is stored in our nitrogen-filled stainless steel tanks to eliminate oxidation, maintaining its fresh taste and high polyphenol content.
