This is an estate-only single variety EVOO, typical of Puglia. The olives are handpicked by the end of October and cold pressed within hours. The bitterness crescendos, giving the oil a long-lasting grassy character that is well-balanced, delivering complex layers of aromas. It is the perfect matching flavor for Caprese salad, sprinkled over fresh mozzarella, added to some pasta sauces, on rare to medium steak, poultry or game dishes.
