Taggiasca originally hails from Liguria, in northern Italy and is usually harvested when fully ripe, yielding a milder, sweeter oil. Since this a newer varietal for us – only our third harvest – we decided to pick it a bit earlier, to see what that would produce, and we are quite happy with the result. Milled at G & S Mill by Nick Ortiz. We recommend using this oil in cold applications: on greens, finishing vegetables, as a finishing oil, or just for dipping with fresh bread.
