Our Organic olive oil is sourced from 200 magnificent old olive trees planted along the crest of the hill in Trequanda. Using dedicated Organic farming principles and careful pruning techniques, we spent three years restoring this beautiful olive grove to its former glory. The olive trees thrive at an altitude of 500 meters, benefiting from a microclimate with abundant sunshine and cool breezes. Ultima Pietra is a delicious Tuscan blend featuring the Leccino cultivar. Our olives are harvested at the peak of freshness, by hand, to protect the fruit and pressed within 6 hours of harvest to optimize flavor, quality and healthy polyphenols.
It is a tremendous honor to win a Gold Award for our organic olive oil. Participating in the [Olive Oil Times Education Lab] Olive Oil Sommelier Program provided the knowledge and inspiration to pursue our goal of creating an artisanal olive oil of the highest quality.
