Archidamo
Archidamo is obtained from the traditional Salento blend but is characterized by additional Coratina. This cultivar lends the oil a specific spicy flavor, laced with bitter, fruity notes. This particular flavor is most important as it signifies a high concentration of polyphenols, which have many different health benefits and increase the oil's shelf life. Where to Find Ernesto Buondonno is a lawyer who has never given up on his true passion: nature and agriculture. He became an agricultural entrepreneur in 2000. In 2018 he and his two nephews founded the Archidamo III agricultural enterprise to produce organic Italian extra virgin olive oil by observing the policy of secular Salentine olive-growing valorization, biodiversity conservation and the enhancement of the rural landscape and historical-architectural heritage
