We produce an extraordinary organic extra virgin olive oil, a blend of the four cultivars that we grow on our farm in Tuscany. The farm was started by Dr. Robert Buly, an orthopedic surgeon from New York. Dr. Buly dreamed of starting a farm to produce olive oil and wine in the same region of Tuscany where his mother was born. This dream became a reality when he started Podere Collalto in 2006, just a few kilometers from his mother's village.
We are a small family farm in Tuscany managing all aspects of our oil's production, from maintaining the trees to harvesting the olives. Our olives are pressed daily during harvest to minimize oxidation and ensure the freshest tasting oil.
