Cantasole

Cantasole EVOO is produced from olives harvested early in the morning during October. We make sure to select and pick the olives of our two favorite varieties: Leccino and Picholine. These two varieties are at the heart of our blend, which is characterized by a special fruitiness and a pungency with the typical personality of Puglia.

About Az. Agricola De Marco

In the beautiful Salento region, close to the sea, Vincenzo De Marco planted our first olive trees in 1885. At that time, the women working on the land used to sing to the trees during the harvest. After four generations, we still produce our oils with the same joy and care. Today, the harvest has been mechanized but still starts early in the in the morning. With this method, we ensure the olives never touch the ground and are taken to the mill to become EVOO within five hours from collection.
