The olives are harvested at the right stage of ripeness at the end of October. The pressing is done in our mill within 6 hours of the harvest. It has a very low acidity, an excellent polyphenol content and a consistent concentration of tocopherols. The aroma is fresh, intense; it reminds olives, artichokes, grass scent. The taste is complex and fresh, with a pleasantly spicy and grassy note and a bitter hint at the end.

About Fattoria San Michele a Torri

Fattoria San Michele a Torri has been an organic farm since 1993, situated in the heart of the Chianti region, just 15 kilometers from Florence. We own more than 900 hectares of land, of which 85 are vineyards, and 110 are active olive groves responsible for producing our excellent extra virgin olive oil. Paolo Nocentini, the current owner, is responsible for the renovation and extension of the crop and the conversion to organic production.
