Where to Find Nestled between the Andes Mountains and the Pacific Ocean, the area’s long, hot summers and mild, wet winters produce a soil that is ideal for growing olives that rival the world’s best. Olivos del Sur S.A., was founded here in 2004. Grown in a high-density grove system, our olives are mechanically harvested at the peak of their ripeness. Then, in our mill facilities located in the heart of our 6,500-acre estate, we extract and bottle our oil within just a few hours from harvest.
