On the hills of Sabina, Anna Maria Billi and her daughters keep regional tradition alive with olive oils made from the fruit of their own orchard. Sole Sabino sings in the mouth with appealing complexity. It has aromas of green plantain, raw artichokes and mild chicories. These are balanced with the green flavors of watercress, arugula, and celery. The oil is pleasantly pungent with bitter notes and lots of pepper.
