1758 Selection

On the first day of the harvest of each variety, the most suitable plots are selected to prepare our 1758 Selection extra virgin olive oil. Each of the olives is pressed separately and afterward the mixture is made according to the oleologist's recipe. The result is a fruity, intense, aromatic and balanced EVOO with a special aftertaste of green fruits and a mild, spicy taste where the polyphenols are perceived.

About Encomienda de Cervera, SL

In the heart of Spain, an hour south of Madrid, is the Encomienda De Cervera (Almagro) property, which was founded in 1758 with the unification of different properties associated with the Marquesado de Cervera. Sitting on these properties is the Maar de Cervera volcano, a natural monument. The location of our groves on these volcanic soils endows our oils with unique characteristics and exceptional properties.
