In the nose, this EVOO has complex fruity aromas of green apple, kiwi, almond, pinions, arugula leaf and cypress, with a toasted touch providing great delicacy altogether. In the mouth, the same olfative progression is perceived; sweet at the beginning where the apple and kiwi emerges again. It is vegetal in the center and balsamic at the end. This oil is elegantly bitter and softly spicy. It is well-balanced with an almond aftertaste.
