The IIliada Organic Emerald Selection EVOO is characterized by a medium olive fruitiness that is reminiscent of olives at the ideal ripening point. Its aroma shows a hint of green banana, vanilla, exotic fruits, ripe tomato, peach and flowers. The resulting oil has a medium-intense pungency and medium-intense of bitter taste, with a flavor of pink pepper.
